Chicken Liver with Apple and Onion
Here's my favourite recipe for a simple and flavourful chicken liver. This dish combines classic sweet, savoury, and rich flavours. I love serving it over homemade mashed potatoes.
Ingredients:
1 lb (450 g) organic chicken livers, cleaned and trimmed
1 medium onion, thinly sliced
1 medium apple, cored and sliced (preferably tart, like Granny Smith)
1 small red pepper, sliced
2 tablespoons of ghee
1 teaspoon of fresh thyme or ½ tsp dried
Salt to taste
Gluten-free flour for dusting (optional, helps with browning)
Directions:
Prep the livers. Rinse and pat dry the chicken livers. Trim off any connective tissue. Optionally, lightly dust them with flour and season with salt and pepper.
Sauté the onion and apple. Heat 1 tbsp of ghee in a skillet over medium heat. Add sliced onions and cook for 5–7 minutes, until they soften and begin to caramelise. Add apple and red pepper slices and thyme. Cook for an additional 5 minutes, until the apples are tender and slightly golden. Transfer to a plate and keep warm.
Cook the livers. In the same pan, add the remaining ghee. Sear chicken livers for 2–3 minutes per side until browned outside but still slightly pink inside (they should be tender, not overcooked).
Combine and finish. Return the onion-apple mixture to the pan. Adjust seasoning with salt.
Serve over mashed potatoes or a bed of steamed greens. A sprinkle of green onions or fresh parsley can elevate the dish.
