Homemade Gluten-Free Pitta & Flatbread
In comparison to store-bought alternatives, this homemade gluten-free pitta/flatbread is gentle on sensitive skin and suitable for those with chronic skin conditions. Free from gluten, refined sugars, synthetic additives, and common irritants, it provides a wholesome base for your meals—and it’s quick and easy to make. Ingredients:
1/2 cup gluten-free flour mix (I use a British brand, FreeeFoods – it contains only clean, natural ingredients)
Approx. 1/4 cup boiling water
Pinch of salt
1 tablespoon extra virgin (EV) olive oil
Directions:
Place the flour and salt in a large bowl, then pour in the boiling water.
Mix with a spoon for about one minute, until the dough starts to come together into a ball.
Add a tablespoon of olive oil and mix briefly.
Sprinkle some gluten-free flour on a clean surface or a large chopping board. Place the dough on the surface and start kneading it with your hands. Add a little more flour if the dough is too sticky.
Knead the dough for a few minutes until it has a soft but elastic texture.
Divide the dough into two equal parts, then roll each piece out with a rolling pin.
Cook each flatbread in a large, dry frying pan over medium heat for about 4 minutes per side, or until lightly browned.
