Hearty Nutrient-Packed Beef Stew
This recipe is rich in protein, iron, zinc, and collagen-boosting nutrients that support skin repair. Paired with antioxidant-packed vegetables, it helps reduce inflammation and promotes healthier, glowing skin from the inside out.
Ingredients:
500g (1 lb) beef stew meat, cut into small cubes
2 tbsp avocado oil or ghee
1 large carrot, peeled and chopped
½ of a small cabbage, chopped
2 celery stalks, chopped
1 small onion, finely chopped (optional if tolerated)
2–3 small potatoes or sweet potatoes, peeled and chopped
2 cups low-sodium vegetable or beef stock (check for additives)
1–2 garlic cloves, minced (optional)
1 tsp dried thyme or rosemary
1 bay leaf (optional)
Quality salt to taste
Fresh parsley for garnish
Directions:
Heat oil or ghee in a large pot over medium heat.
Add beef cubes and brown on all sides. Remove and set aside.
In the same pot, add carrots, celery, cabbage and onion (if using). Sauté for 3–4 minutes until slightly softened. Add garlic and cook for one more minute.
Return the beef to the pot. Pour in the stock, add potatoes, herbs, and bay leaf.
Bring to a gentle boil. Reduce the heat to low, cover, and simmer for 1–1.5 hours, or until the beef is tender and the vegetables are cooked through.
Stir occasionally and add more stock if needed.
When you finish cooking, remove the bay leaf, adjust the salt, and garnish with fresh parsley before serving.
