Gut-Healing Chicken Broth

This broth is packed with essential nutrients- protein, vitamins, minerals, collagen and amino acids which promote healthy digestion, improve the gut lining and contribute to your skin heal.


Ingredients:

1 whole organic chicken

2-4 organic chicken feet (optional- for extra gelatine)

4 or more liters of filtered water

1-2 medium yellow onions

2-4 carrots

2-4 celery sticks or 1/4 of celeriac root

3-5 garlic cloves

a couple of bay leaves

1 tablespoon of raw apple cider vinegar (optional- to get more of the minerals and trace elements out of the bones)

1-3 teaspoons of mineral salt

bunch of parsley


Directions:

Rinse the chicken in clean fresh water.

Place it in the pan and add the remaining ingredients.

Fill the pan with filtered water.

Bring to a boil. Reduce the heat to a simmer and cook for 1 ½ to 2 hours.

Add parsley and salt during the last 10 minutes of cooking.


Side Notes:

When the chicken soup is ready, you can debone the chicken and reserve it for eating or putting it back into the stock.

You can eat the chicken stock as a soup in a bowl with added chicken meat and carrots or drink the stock from a cup (use a fine sieve to pour it into the cup if you don't want any little bits, just a clear stock).
